Extract the juice of the ripe alphanso mangoes and keep it simmering in a pot on a low flame. From time to time you need to stir it well. You have to be careful as the juice may fly on your hands at this time. After about 20 to 30 minutes let it cool a little, and then pour this juice on an aluminium plate with some ghee/butter applied on. Then spread it properly and keep it to dry in the sun. After 4 to 5 days of good heat, the Mango pancake is ready.
