Coconut Milk Shevaya

Coconut Milk Vermicelli is another sweet dish made from coconut and rice which is a specialty of Alibag. This dish is usually prepared at home on the festival days of Narli Poornima or Dahi Handi. Coconuts and rice have been available in abundance here for a long time, which is why this dish has been made here since ages. The taste of white rice flour and fresh coconut milk can be enjoyed together in this dish.

First the fresh coconut is cracked open and grated coconut is extracted, then the milk is extracted by pouring water into it. Grated jaggery, cardamom powder is added to it and this milk is prepared.

Then the rice flour is boiled. Boiled water and rice flour are mixed in equal proportions. Then this dough is made into medium size balls. These balls are then cooked in boiling water. If turmeric leaves are added to this water, it gives a nice aroma. When these dough balls start floating on the water, they are considered fully cooked. Then make medium sized vermicelli of this flour. These hot vermicelli are delicious when eaten with coconut milk.
