Kokum, found mostly in Konkan, is famous everywhere for its Syrup. These trees are found in abundance in Konkan, as well as in Alibaug. A lush green but tall tree is filled with deep red kokums in April, May.

Kokum Syrup is prepared at home in Alibaug and surrounding areas. Peel is cut into pieces and placed in a glass jar, sugar is added and a little salt is added. The mouth of this jar is closed with a thin cloth and this jar is kept in the sun, the sun melts the sugar and the juice and extract of the kokum bark gets into it. In this way a thick Kokum juice is prepared. Usually, this jar is kept in the sun for about 1 month, then it is kept indoors. Syrup is made by extracting its juice as needed.

Now a days many small scale industries make and sell syrup.

Kokum has many medicinal properties. Its main use is as a choleretic. Kokum Syrup is also very useful for digesting food. Reduces acidity in the body.
